When a customer comes in my shop for a fork oil change I measure what comes out and that's the amount I put back in. Now if they've been leaking then I got to refer to the service manual for that bike to know what to put back it.
When they ask to make it stiffer then I'll go with the next weight up from what the stock calls for . If it's too stiff then I'll go with the stock fluid but put more in to fine tune it to the customers liking.
Damb customers can be picky sometimes lol!

If I was by my FSM I'd tell you what it says to put in it.
It won't be till tomorrow though so maybe someone will chime in before I do.

480 ml (16.2 oz) goes back in so approx. as much should come out when dumping the old fluid out.
Stock is 5wt .
As for changing the fork oil. I do this:
Remove the forks, unscrew the top cap with the adjusters . It won't come off all the way off with out a spring compressor but you won't need it.
Turn the fork upside down and pump the fluid out.
Measure what comes out for reference.
Have a funnel with a hose small enough to fit in the top of the fork and pour the measured amount of fork oil in.
Screw the top cap back on and tighten it up. Repeat for the other fork.
