COUNTERSHAFT SPROCKET
I am planning on putting a 16 tooth up front. This bike is geared to tall and I am never gonna bury the speedo. My question is, will the sprocket effect the computer, and will it also throw my speedo off.

Yes it will affect the speedo and odometer.

Next question: how many teeth can I go up in the rear with the stock chain, 2 or 3 ?????

you can go as large as you like.
To hit the rev limiter at 300 km/h or 186 you could go from 17/ 41 stock to 16/43.
Stock gearing equates to 202 mph if it could pull it .....at redline.
16/43 = 186 mph at redline .
For local rides and drags this may be the way to go, but fuel mileage would suck.
With such a low 1st gear an additional gear change would probably be necessitated in the 1/4 so some losses may be seen from the gain .

Good points, going up 2 in the rear should only drop about 300 RPM at 80 MPH. I would rather have the extra power down low. I will never go close 186

bahhh fuck it ,
Cruising around town I get 40 MPG, on highway 32-34 mpg at 160!
Want to stretch and have a smoke after 2 hrs anyway.
Mind you if we could get the bottom end derestricted, and a pipe....

simply better to do when you need a tire & chain replacement
no less
that you are mature enuf to know & admit
you are Not "Ricky Racer"
the advantages are in your favor
if you use your mid range judiciously
are not prone to winding out each gear
in essence "short Shifting"
as moany have discovered & use extensively
when they have vehicles that possess a lot of "Headroom" (plenty or excessive power)
you may actually experience better gas mileage
there have been plenty of bikes geared toooooooooo loooong
with 100mph 1st gears
of course no one rideds around 25.... 45.... 55mph zones
in 1st gear
ther is a lot of merit & several advantages for what you intend to do
