replacing ZX10R clutch

I am about to replace my clutch and I was told that there are 3 different thickness steels avail to give the proper stack height needed for the dept of the inner hub. Just curious if there is any merit to this. thanks

Yes, there are three different thickness plates:

13089-1084 2.3mm
13089-1115 2.6mm
13089-1093 2.9mm

There's a note that says DO NOT use the 2.3 and 2.9mm plates at the same time.

Use the 2.6s, and a 2.3 on the outer most plate, and you will get the ideal thickness if you are replacing all the fibers and steels. Double check your steels. Chances are they are well within service limits, and chances are good that they are still very close to 2.6. If you replace the outer plate with the 2.3, you will get a little more "slip" from the slipper clutch without it feeling like a two stroke. There are some other tricks available if you want to PM me they require EXTENSIVE explanation.
