I'm betting the caliper is sticking, making the brake drag, heat up everything, fluid expands, and locks brake up.
What do I need to do to get the caliper pistons to quit sticking? I'm not sure if I feel like rebuilding it, but will if need be.

Forget the fluid expansion, fluid would get pushed back if room in reservoir .
Remove caliper and take a look. Pump pedal, use c clamp to push fluid back and forth. Confirm Free Float.
U said you are using front caliper on rear disk or is it a front disk on your rear set up ,,,,,?//// ?
The Rotors are diff thickness if wrong set up with New pads = no room . should go on with ease. If Not, you found it.
What is the thickness of your rear caliper 6mm or 5?
Pics would help. Not enough info to give good help, sorry.
Can't see New Caliper being seized, but maybe,,,,,,,,,
