Changing sprockets will fool the speedo.
Top Speed videos mean NOTHING without a GPS. It very well could have been a geared up bike that was going 160mph but showing 185mph (299kmh). Judging by how quickly it went from 220kmh to 299kmh... I'd say this was most likely the case. The bike didn't accelerate like it was hitting any kind of real wind resistance up top, I call B.S.

I just recently brought an 07 ZX10R limited edition model and yeah 299 km (186 mph) is no worries with standard gearing and trying to keep the front wheel down is an issue too. From experiance I can get to this speed in under 10 sec. but as the video shows that bike must geared different cos i haven't hit red yet.
