Gearing on 72" cartire chassis zx14 motor

Ok, Here we go. I'm finally scrapping the KZ motors and getting into the 21st. I'm stuffing a zx14 motor into my chassis, and have some questions.

first things first, I hear that most of the streeters and a few of the chassis bikes are only using 5th gear for 1/4 mile. whats the point of having 6 there if youre not using them?
What kind of gear ratio should I use?
The bike is 72", 26.0x8.5 M/T rear. combined total weight is 625lbs. I just need a half-assed starting point mostly for the front sprocket, as I need to custom build it for the offset.

I'm going to have a lot more questions as to what electronics/wires I can get rid of, and what I need to keep, Ignition control, fuel control, airbox, etc, etc... But for now, I'll work on the sprockets

so whats that going to need? 3/8 or more offset?
the 26 in tires are a lot taller than the regular street tire that the bike was designed for. unless you are going to make a lot of power, you will need to gear it quite a bit differently. Im currently 1 down, 3 up on my turbo 12 that runs the 26 7 17 mt

Its going to be more like 1 3/8" offset, which is irrelevant right now, I'll get the exact measurement later. As for power, it's just the stock 06 motor with 50 shot dry

i was looking at the 8.5 and didnt think i would need nearly that much offset. must be a lot different with a tube chassis.
I think theres a couple guys on here with 14 powered car tire chassis bikes, OSR has one
