off topic....tis the season....
....to make maple syrup 
I thought you guys and gals down south might find this interesting.
Ive been helping my uncle out with this for a few yrs now since he took it over from my grandfather. we have about 1500 taps we are just about to start putting in the trees. we have had a LOT of snow this yr and we have had to shovel a lot of the lines out. 2 full days of snowshoeing/shoveling(yeah im sore! lol). the sap gravity feeds thru plastic tubing into a larger main lines which drain into a holding tank. no more tin buckets hanging on trees like the old days, allthough we do put up 4-5 just because. the lines cant be burried or they freeze up. when we get about 300 gallons or so(300 is the min for a boil, 700 ish has you there untill midnight trying to catch up) we pump it to a holding tank in the evaporator building where its regulated into the evaporator. we are putting in a new one tomorrow so ill get some pics of that. its about a 40-1 ratio of sap to syrup, so its a lot of boiling and we go thru a lot of fire wood. (we often joke that it would be more profitable to put the same effort into just getting firewood and selling it)

it is a lot of cold and hot work(outside and inside). im sure i could set you guys up with some syrup if you want to buy some(its not mine to give away). the stuff made here will hand Aunt Jemima her ass
the big sellers are the 40oz Crown Royal bottles. cant get enough filled every yr for the demand. we got the new arch/evaporator in today. no pics yet, i forgot, but its about 4x10 ft i believe. need to line it with bricks and or insulboard and finish the new flue pipe(i think its 22in diameter stove pipe)
