Rear wheel curiousity
How much harder (or maybe it's easier) to remove a rear wheel on a shaft drive compared to a chain drive??

Definetly easier. No chain to mess with.
Remove the one bolt holding the caliper hanger.
Remove the axle.
Drop the caliper.
Pull the wheel away and it falls out.
Replacing is easy.
Slide the axle in and hang the wheel on it.
Slide the wheel against the splines.
Put the caliper hanger back in place.
Bolt it back on;
Tighten the axle nut.
No fooling with the spacer on the chain side.

Does the center stand raise the bike enough to drop the tire or do you need a jack?

The center stand is just fine. Just lean the wheel over and it comes right out. The whole job is much easier than a chain drive. less spacers, no adjustments.
