Throttle Hesitation
I'm a new new 14 owner. Bike has 900 miles on it with a full Yoshi system, PC III and been dyno'd. Finanlly got the courage and had the right situation to take it almost to red line. Noticed some brief hesitation at about 7,000 RPM's or so. Things were happening pretty fast. Tried it a second time. Same thing. 3rd and 4th time didn't seem to hesitate. Any ideas what was happening?

That's just the sound barrier being broken. You'll get used to it.

Disconnect that PC3 and try it. I bet the hesitation will be gone, that the exhaust will sound a lot crisper and it will run a bunch cleaner. Just because it has been dyno tuned doesn't mean that it is right.
Kawasaki engineers who are pretty sharp cookies spent a lot of time/money developing a really good fuel/ignition MAP for their bike. They know and understand more about how to make it run right than most dyno shop operators.
I know I did and never went back to the PC3. Bike just plain run great the way it was built.

+1 sounds like the dyno operator didnt account for the ram air effect leaning his map out at higher speeds.
