Basic stuff...

# 1) Is there any real reason Kawasaki says
( in the manual ) to NOT change your own Oil filter ??

AND #2) is taking off the lower fairing, as easy as it looks??
I dont want to be breaking what looks like "plastic"
screws, and have to go pay the dealer $25-$50 for
new ones.

Well any OEM is going to recommend the dealer to do ANY type of service. If you read closely it also states something about adhereing to maintenance schedules and qualified personel. You can use any shop (or do it yourself) As long as you keep receipts and records on the scheduled items, you will be covered by the factory warranty.
The lower fairing comes off pretty easily. Just a few shortcuts to remember and you shouldnt have any problems.
Inside the front fairing (near the radiator) there is a phillips screw located near the horn. That one is often overlooked. Then you have the 3 near the upper fairing. One allen head in the middle and down near the bottom of the swing arm. Then there is one phillps near the back and one underneath the fairing. Here is a short cut for the left side:
-Take the front inner fairing phillips out first
-Take the 3 phillips out near the upper fairing
-Remove the 2 allens (upper and lower)
-Remove the rear phillips and front lower one (chin)
-remove the lower phillips (near the kick stand)
-All thats should be left is the plastic screw near the faux tank. Simply pull that out while supporting the side fairing. You may have to *unclip* the side fairing from the front inners.
The oil filter should be exposed as well as the drain bolt. Fairly straight foward. Make sure you *prime* the new filter with oil before installing. Just pour some oil in it so the element can get soaked. You should also replace your drain bolt with a magnetic one also. The 12 has a deep sump, so they actually work pretty well.
