Billet Oil Pans / Exhaust?

Is a sidewinder the only pipe that will work with the low-profile pans? I don't really want to run a sidewinder (bike is street/track), but I like the idea of consistent oil pressure when racing.

I would more consider getting an Accumulator and Kawachan has one with billet bracket for sale about $350 That will take care of that problem for you.

Yes, A sidewinder is the only pipe you can run with a billet oil pan. If you are worried about oiling issues you might consider an accumulator like Vince suggested.
