Why does carbon steel get magnetized on machining, grinding etc.

Carbon Steel gets magnetized when it is machined or grinded heavily. Why?

that's closest i can find to any sort of explanation that might be helpful

basically mechanical shocks can align the magnetic domains in the metal, and machining is a series of shocks, all in the same direction.

a subsequent shock, or exposure to a strong and random magnetic field will erase this magnetism. also heat-treating the metal will demagnetize.

Yep, one of the oldest tricks in the book. Many the output shaft of a tranny that made a interesting magnet (and useless for anything else) after shearing off while drag raging.

If I take a carbon steel bar magnet and smack it with a hammer, it'll result in a much weaker magnet - many of the domains are no longer lined up. HOW do they change?

because the act of "machining" lines up the molecules in the iron. This alignment causes magnatism.
You can also do this by rubbing a steel rod repeatedly from one direction.
Hit it with a hammer to remove the magnatism.

they're just electrons. a good solid thump can move them around. heck a little electricity will do that for ya

but more technical: they are moving all the time. they have inertia, justlike everything else. albeit not nearly as much, but still they have momentum and want to continue to move where they were going

solid thump moves the bar quite sharply, the inertia may be enough to make them re-align.

just a theory, and probably not a good one but that's how i understand it to work.

It Also Helps id the Piece is aligned North & South, then the heat and shock will allow the Molecules to have their north and south Poles in proper alignment!
